Wild Rice with Avocado Mexican Style
200g wild rice
one ripe avocado
one ripe tomato
2 160g bowls of Rio Mare Insalatissime Messicana
40 g olive oil
1. Cook the rice in salted water. Once it’s cooked, rinse it under cold water and drain it well.
2. Cut the tomato into small cubes and add it to the rice, season with a bit of oil.
3. Peel and cut the avocado into small pieces, season with a bit of salt and oil and place it on top of the rice.
4. Add Rio Mare Insalatissime Mexican Style and mix all the ingredients stirring gently.
